The Dutch medlar is a unique and ancient fruit-bearing tree known for its small, round to pear-shaped fruits. The fruit is typically 2–4 cm wide, brownish in color, and has a rough, leathery skin. When freshly harvested in autumn, the medlar is hard and astringent, but it becomes soft and edible after a process called bletting—a natural ripening that occurs post-harvest, where the fruit turns soft, dark, and slightly wrinkled.
Once bletted, the flesh becomes soft, brown, and paste-like with a rich, sweet flavor often compared to spiced apple sauce or dates with a hint of wine. It contains several large seeds in the center. The fruit is traditionally used in preserves, jellies, or eaten raw after bletting.
